    Proper Cornish

    Back in 1988 three Cornishmen, Phil Ugalde and brothers Chris and Dave Pauling became disillusioned with commercially made so called “Cornish pasties”. The market was being driven by price rather than quality, so they set about bringing authenticity, taste and quality back into the Cornish pasty market – and so “Proper Cornish” was born.
    Using a Pauling family recipe handed down through the generations, they started out with a handful of family members making just 100 handmade pasties a day from their kitchen table.
    Their products quickly became extremely popular locally and instantly they knew they’d hit upon a great business idea. Their customers loved the taste and also the fact they were using local ingredients and that everything was freshly prepared in-house. Today, 30 years on, this hasn’t changed. Our potatoes are grown just 7 miles from the bakery, being delivered daily to be freshly prepared just in time. Our swede and onions are grown just 30 miles from the bakery and again are prepared freshly in-house every day and we still hand crimp every pasty, usually around 50,000 a day or more. We wouldn’t have it any other way.
    Now employing over 200 colleagues, we’ve added some automated products like sausage rolls, slices and turnovers; still the same great quality but just a little easier to make. We have great capacity and now operate from two BRC (AA certified) state of the art bakeries, still in the heart of Cornwall – that won’t change, we just love it here in Cornwall! Our product range has been extensively increased to include a delicious range of pasties, sausage rolls, slices and turnovers catering for meat eaters and vegetarians alike. Our tasty products are enjoyed at schools, colleges, universities, sports stadiums, leisure venues, tourist attractions, hospitals and care homes and through many specialist bakery chains. National supply is readily available as we’ve set up an excellent supply network working with major wholesalers.

    We’ve also developed a variety of branding solutions to help drive sales and have some fantastic case studies we would be delighted to share with you. So over the years, quite a few things have changed, but some things will never change. With Phil and Chris still at the helm of the business they are just as passionate today about quality and taste as they were 30 years ago. Their mantra is “made proper to taste proper” – that’s just the Proper Cornish way and it always will be.
